A  close friend of ours is friends with the three talents that make up Tacos Kokopelli. Oso, Pablo, and Cricket started Tacos Kokopelli around three months ago. Oso is a Culinary Art School alumni, that is showcasing his skills with this street side mariscos taco stand. They offer grilled seafood tacos, ceviche, and even a grilled Portobello Mushroom option for those not into seafood or Vegetarians.  As we were sitting at breakfast, indulging in Chilaquiles our friend was talking about their tacos. She started listing off their menu, and as soon as I heard "Pulpo al Pesto", I was signed up.

Most people might not be thinking about eating tacos, after a full breakfast but that's all part of the fun. Our day trips to Tijuana usually consist of eating the entire time, which believe me I am more than fine with. Next thing I knew we were standing at Tacos Kokopelli, and it was time to order. This time around we only ordered two tacos, but it only took these two tacos to know that we would definitely be returning for more.

Tacos Kokopelli in Tijuana Kraken This little beauty is known as their  "Kraken". It consists of Pulpo Marinado en pesto mexicano, an Anaheim Chile filled with cheese, and topped with avocado. If you aren't in the mood for so much heat, you can opt out of having the chile put inside of the taco, but I really loved this part of their concept. The octopus is marinated in their own pesto Mexicano, which is made up of cilantro, ajo y chile poblano. The octopus is more than delicious enough to eat on its own, but all of the ingredients together make it an unforgettable taco experience. I have not stopped thinking about this taco since last weekend. We will meet again soon my little lovely.

Tacos Kokopelli in Tijuana Gringo en Vacaciones The next taco that we enjoyed was their "Gringo en Vacaciones". This taco consists of Camarones en Adobo de chiles rojos, an Anaheim chile filled with cheese, and topped off with avocado. I really can't get over the grilled chile that works as a pocket being filled with the fresh and flavorful seafood. This was another tasty taco, and if you love shrimp this option is for you. Again, if you aren't so much into the whole chile being inside of the taco they have a gorgeous array of housemade salsas to choose from. You can really  make your taco into its own little piece of artwork.
