El Casimiro: Chef José Figueroa pairs with one of Tijuana's best breweries on Revolución
Tijuana’s Chef José “Joe” Figueroa (La Carmelita / Corazón de Torta) has a brand new outpost inside of one of the city’s best craft breweries— Insurgente brewery. El Casimiro joins new and old projects along historic Revolución avenue— the best place to be in the city now.
Joe’s creativity goes to greater lengths at his new spot, with the freedom to sling out new dishes and the inspiration that comes from the hubbub of Downtown, Tijuana. Case-in-point is Figueroa’s Croquetas de Quesabirria, an ode to Tijuana’s birria stands that feed the crowds first thing in the morning. The beef birria filled tortilla balls are a 3-day laborious process that is brimming with Ramonetti cheese and come dressed in a salsa macha aioli. If you followed us for a while, you best know that mariscos and beer go hand-in-hand in Tijuana (and frankly, anywhere else in the world!), and a Tostada de Ceviche Tatemado with Insurgente’s Juan Cordero is the perfect example. The catch of the day Aguachile Rosa reminds you again that you are in Baja, and should take your time to enjoy it with Insurgente’s Rosa Salvaje sour beer.
